Ingredients (Serves 6–8)

  • 2 lb ground bison (grass-fed Canadian bison)

  • 2 large sweet potatoes, peeled and diced

  • 1 large yellow onion, diced

  • 3–4 cloves garlic, minced

  • 2 (398 mL) cans fire-roasted diced tomatoes, undrained

  • 1 (398 mL) can tomato sauce

  • 1–2 (540 mL) cans black beans, drained and rinsed

  • 2 cups beef or bison broth

  • 2 tbsp chili powder

  • 1 tbsp ground cumin

  • 1 tsp smoked paprika

  • ½ tsp ground coriander (optional)

  • Salt and pepper, to taste

  • Olive oil, for browning

Optional toppings: shredded cheddar cheese, sour cream, avocado, fresh cilantro, jalapeños.

Great bison starts with great care, and True Grit delivers exactly that. Their products are known for rich, clean flavour and tender texture — something customers immediately notice.

Iman, a first-time visitor to the ranch, shared:
“Fantastic selection and wow is it ever tasty. We will be back.”

If you’re searching for bison that tastes noticeably better, this ranch is a top choice.

Instructions

  1. Brown the ground bison
Heat olive oil in a skillet over medium heat. Add the ground bison and cook until browned, breaking it apart as it cooks. Lightly season with salt and pepper. Transfer the cooked bison to your slow cooker.

  2. Add vegetables
Add the diced sweet potatoes, onion, and garlic to the slow cooker with the bison.

  3. Add remaining ingredients
Pour in the fire-roasted tomatoes, tomato sauce, black beans, and broth. Sprinkle in the chili powder, cumin, smoked paprika, and coriander. Stir until well combined.

  4. Slow cook
Cover and cook on Low for 6–8 hours or High for 4–5 hours, until the sweet potatoes are fork-tender and the flavours have fully developed.

  5. Finish and serve
Taste and adjust seasoning as needed. Serve hot with your favourite toppings.

Why Cook with Bison?

Bison is a lean, high-protein red meat that’s lower in fat than beef while still delivering bold, rich flavour. When slow-cooked, ground bison becomes tender and juicy without feeling heavy. Choosing Canadian, ranch-raised bison supports sustainable farming and gives you a premium protein you can feel good about serving your family.
