Ingredients (Serves 6–8)

  • 2 lb ground bison (grass-fed Canadian bison)

  • 2 large sweet potatoes, peeled and diced

  • 1 large yellow onion, diced

  • 3–4 cloves garlic, minced

  • 2 (398 mL) cans fire-roasted diced tomatoes, undrained

  • 1 (398 mL) can tomato sauce

  • 1–2 (540 mL) cans black beans, drained and rinsed

  • 2 cups beef or bison broth

  • 2 tbsp chili powder

  • 1 tbsp ground cumin

  • 1 tsp smoked paprika

  • ½ tsp ground coriander (optional)

  • Salt and pepper, to taste

  • Olive oil, for browning

Optional toppings: shredded cheddar cheese, sour cream, avocado, fresh cilantro, jalapeños.

Instructions

  1. Brown the ground bison
    Heat olive oil in a skillet over medium heat. Add the ground bison and cook until browned, breaking it apart as it cooks. Lightly season with salt and pepper. Transfer the cooked bison to your slow cooker.

  2. Add vegetables
    Add the diced sweet potatoes, onion, and garlic to the slow cooker with the bison.

  3. Add remaining ingredients
    Pour in the fire-roasted tomatoes, tomato sauce, black beans, and broth. Sprinkle in the chili powder, cumin, smoked paprika, and coriander. Stir until well combined.

  4. Slow cook
    Cover and cook on Low for 6–8 hours or High for 4–5 hours, until the sweet potatoes are fork-tender and the flavours have fully developed.

  5. Finish and serve
    Taste and adjust seasoning as needed. Serve hot with your favourite toppings.
