Bison Brisket

Bison brisket topped with bacon and smoked for a rich flavour

Ingredients
  

Meat

  • 5.5 lbs Bison brisket
  • 1 lbs Bacon

Marinade

  • 1/2 cup Olive oil
  • 1/2 cup Worcestershire sauce
  • 4 cups Coca Cola

Cooking Brine

  • 2 cups Broth
  • 1/4 cup Apple cider vinegar

Instructions
 

  • Marinade brisket for 24 hours prior to smoking.
  • Preheat grill to 220, fill water pan and place in smoker
  • Wrap briskets in bacon
  • Place briskets on grill, lower to 180 degrees
  • Smoke for 45 min
  • Pull out and wrap in butcher paper or foil, add quarter cup of vinegar/broth brine
  • Continue to smoke for 3-4 hours until it reaches internal temperature of 170
  • Remove briskets from smoker and let rest for 30 minutes before serving.

Bison Stroganoff

This meal is perfect for a busy week night. It can easily be made ahead of time or freezer-ready.
Enjoy the flavour of bison in this classic recipe.

Servings 4

Ingredients
  

  • 1 lbs Ground bison
  • 1 Onion, diced
  • 3 Cloves of garlic, minced
  • 255 g Mushrooms, diced
  • 1 1/2 cups Broth
  • 1 tbsp Worcestershire sauce
  • 2 tsp Dijon mustard
  • 1/4 cup Plain greek yoghurt (or substitue for sour cream)
  • 8 oz Pasta
  • 1 tbsp Fresh parsley, diced to garnish

Instructions
 

  • Fill a large pot with water and 1 tsp of salt. Cook noodles according to package instructions.
  • Saute the ground bison in a large skillet over a medium heat. Season with salt and pepper.
  • Add the onion and continue cooking for 3 minutes. Add the garlic and mushrooms and stir to combine. Continue cooking for 5 minutes, or until mushrooms are cooked and onions are soft.
  • In a medium bowl, whisk together broth, worcestershire sauce, and dijon mustard. Add mixture to ground bison. Cook until heated through.
  • Remove from heat. Add greek yoghurt and stir until combined.
  • Serve with noodles and garnish with chopped parsley.

Notes

Pro tip: Deglaze pan with 1/2 cup of wine before adding broth mixture for a richer flavour.

Bison Meat Sauce

Looking for a great meat sauce you can use for different meals? Simply freeze and use for a quick meal of spaghetti, lasagna, or dipping sauce for bread sticks!

Ingredients
  

  • 2 lbs Ground bison
  • 1 Onion, diced
  • 4 Cloves of garlic, minced
  • 1 (28 oz) can Crushed tomatoes
  • 2 (8 oz) can Tomato sauce
  • 2 (6 oz) can Tomato paste
  • 1/2 cup Broth
  • 2 tbsp honey
  • 1 tbsp Fresh chopped basil leaaves
  • 2 tbsp Fresh chopped parsley
  • 1 tsp Salt
  • 1 tsp Italian seasoning
  • 1/2 tsp ground pepper

Instructions
 

  • In a large pot on medium heat, saute onions and garlic until fragrant. Add ground bison and continue to cook to brown meat, appropriately 6 - 10 minutes.
  • Add crushed tomatoes, tomato sauce, tomato paste and broth. Stir into bison meat mixture and cook until warm.
  • Add honey, basil, parsley, salt, Italian seasoning, and pepper. Stir to combine. Cover pot and allow meat to simmer on low for 15 minutes.

Notes

This meat sauce is perfect to freeze and use at a later date.

Mediterranean Bison Bowl

  • 1 lbs Ground bison
  • 2 tsp Fresh or dried dill
  • 2 tsp Fresh or dried oregano
  • 1 Red onion, diced
  • 1 Bell pepper, diced
  • 2 Small zucchini, diced
  • 4 cups Spinach
  • 2 tbsp Feta cheese
  • 2 tbsp Tzatziki
  • Salt and pepper to taste

Instructions
 

  • Saute ground bison in pan over a medium heat until cooked through.
  • Add diced onion, zucchini, bell pepper, and continue to saute for 5 minutes.
  • Season will dill, oregano, salt, and pepper to taste
  • Serve on a bed of spinach with feta cheese and tzatziki

Notes

Pro tip: Add Kalamata olives as an extra topping

Ingredients
  

Burger Patties

  • 1 lbs Ground bison
  • 2 tbsp Whole grain mustard
  • 2 Cloves of garlic, minced
  • 1 Egg
  • 1 cup Crushed salt & pepper potato chips

Toppings

  • 4 Burger buns Pro tip: Toast the buns on the grill prior to serving
  • Lettuce, tomato, cheese, pickles, onions and condiments

Instructions
 

  • Preheat grill to a medium heat
  • Combine ground bison, mustard, garlic, egg, and potato chips in a bowl. Divide into 4 equal patties
  • Grill uncovered until nicely browed on the first side, approximately 2 to 3 minutes. Flip burgers and continue to cook for 2 additional minutes
  • Serve with toppings as desired
