Directions

  • Step 1

    Preheat the grill to medium heat and the oven to 300 degrees.

  • Step 2

    Season short ribs with salt and pepper.

  • Step 3

    Sear ribs 3 minutes per side. Transfer short ribs to a dutch oven.

  • Step 4

    Sauté onions, garlic, celery for 3-4 minutes until soft.

  • Step 5

    Deglaze the pan with red wine and broth, bring to a simmer.

  • Step 6

    Pour braising liquid into the dutch oven with the short ribs, ensuring they are ¾ covered.

  • Step 7

    Bake covered at 300 degrees for 4 hours.

  • Step 8

    Serve with choice of whipped potatoes, polenta, rice, pasta or risotto.

PRO TIP: Blend braising liquid for a vegetable gravy to serve on the side.
