2 lbs bison stew meat
2 tbsp oil (canola or avocado)
1 large onion, diced
3 cloves garlic, minced
3 carrots, chopped
3 potatoes, cubed

1 cup red wine (optional)
2 tbsp tomato paste
1 tsp thyme
1 tsp rosemary
Salt and pepper to taste
Instructions
Heat oil in a large pot over medium-high heat. Brown the bison on all sides.
Add onion and garlic, cooking until softened.
Stir in tomato paste, thyme, and rosemary.
Add carrots, potatoes, parsnips, broth, and wine (if using).
Bring to a boil, then reduce heat and simmer for 1.5–2 hours, until the bison is tender and the stew has thickened.
